Hand-picking is a central prerequisite for high-quality sparkling wine production. Only by hand-picking can perfectly healthy, uninjured grapes be harvested. In years with an increased risk of rot, hand-picking is all the more important to sort out any berry that does not belong in the grapes. Also to guarantee the so important whole bunch pressing, the grapes must be hand-picked.
